THE PRODUCT

MirokuMai is coming from an “Akitakomachi” type of seed, a Japonica short grain rice. It is one of the best Japanese rice variety.

Once freshly cooked it becomes sticky and chewy in texture with a wonderful aroma. When cold, it retains its shape and moisture.

The features of this exceptional rice makes is the perfect choice to craft high quality Sushi and Onigiri.

MirokuMai is available in a 5kg format but also in larger professional sizes for restaurants, sushi chains and factories.

Measure out 3 cups of rice (540g)

Rinse the rice in clear water 2 times

Wash 2 times with bare hands and minimum water to allow friction between the grains

Drain well

Let the rice soak for 30 minutes in 3 1/2 cups of water (720ml) in the cooking pan

Place on medium heat and bring to a soft boil,then lower temperature and cook for 20 minutes with the lid on

Turn off the heat and leave covered for another 10 minutes

Open the pan and mix the rice gently with a spatula
